The Optimal Sharpening Angle for Chef Knives: Why 20 Degrees Is the Sweet Spot

The angle at which you sharpen a knife is one of the most consequential variables in the sharpening process, and it's one that a lot of home cooks either don't think about or get wrong. Sharpen at too acute an angle and the edge is fragile and chips easily. Sharpen at too obtuse an angle and the edge is durable but not particularly sharp. The goal is to find the angle that produces the best balance of sharpness and edge retention for the specific knife and the specific use.

Why Angle Matters

The edge of a knife is a wedge. The thinner the wedge, the sharper the edge and the more easily it cuts. The thicker the wedge, the more durable the edge and the more force required to cut. Sharpening angle determines the geometry of that wedge. A lower angle produces a thinner, sharper, more fragile edge. A higher angle produces a thicker, more durable, less sharp edge.

The steel the knife is made from affects where the optimal angle falls. Harder steels can hold a thinner edge without chipping. Softer steels need a slightly more obtuse angle to maintain edge integrity. This is one of the reasons that Japanese knives, which are typically made from harder steel than European knives, are often sharpened at lower angles.

The 20 Degree Standard

Twenty degrees per side is the standard recommendation for most Western-style chef knives, and it's a reasonable starting point for most kitchen knives regardless of origin. It produces an edge that is sharp enough for all standard kitchen tasks and durable enough to hold up through regular use without constant resharpening.

Japanese-style knives are often sharpened at 15 degrees per side or even lower, which produces a keener edge that excels at the precise slicing work those knives are designed for. The tradeoff is a more fragile edge that chips more easily if used on hard foods or with lateral force. If you're using a Japanese knife for its intended purpose, the lower angle is appropriate. If you're using it for general kitchen work including tasks it wasn't designed for, 20 degrees is more forgiving.

Consistency Is More Important Than Precision

The exact angle matters less than maintaining a consistent angle throughout the sharpening process. An edge sharpened consistently at 22 degrees will outperform an edge where the angle varied between 15 and 25 degrees during sharpening. The consistent angle produces a clean, uniform edge. The inconsistent angle produces a ragged one that doesn't cut well and doesn't hold up.

Angle guides are useful for developing the feel for the correct angle before you can maintain it freehand. Most experienced sharpeners work freehand, but the skill takes time to develop and there's no shame in using a guide while you're building it.

Maintaining the Edge

A honing steel used regularly between sharpenings keeps the edge aligned and extends the time between full sharpenings. Honing doesn't remove metal the way sharpening does. It realigns the edge that has folded over with use. A knife that is honed regularly needs to be sharpened less often, which means less metal is removed over the life of the blade and the knife lasts longer.
