Types of Knife Blades: Shapes, Materials, and Their Uses
The variety of blade shapes available in kitchen knives reflects the variety of tasks that knives are asked to perform. Each profile is a design solution to a specific set of cutting problems, and understanding what each shape does well makes it easier to choose the right knife for the work you actually do and to understand why your knives perform the way they do.
The Chef Knife Profile
The Western chef knife has a curved belly that runs from the heel to the tip, allowing for a rocking motion during chopping and mincing. The curve means that the blade contacts the cutting board progressively from heel to tip as it rocks, which is efficient for high-volume chopping tasks. The tip is pointed and useful for detail work. The overall profile is a compromise between the rocking efficiency of a curved blade and the slicing efficiency of a straighter one, and it handles a wider range of tasks than any more specialized profile.
The Gyuto
The gyuto is the Japanese equivalent of the Western chef knife, but with a flatter belly and a more acute tip. The flatter profile means less rocking motion and more push cutting, where the blade moves forward through the food rather than rocking. This is more efficient for precise slicing work and for the kind of vegetable prep that Japanese cuisine emphasizes. The thinner blade geometry typical of gyutos also means less resistance through food. The tradeoff is a more fragile blade that requires more careful use.
The Santoku
The santoku is a Japanese all-purpose knife with a shorter, wider blade than a gyuto and a sheepsfoot tip that curves down to meet the edge rather than coming to a point. The name means three virtues, referring to its suitability for meat, fish, and vegetables. The flat profile is designed for push cutting rather than rocking. The wider blade is useful for scooping cut ingredients off the board. The blunt tip makes it less useful for detail work than a chef knife or gyuto but safer for cooks who are less experienced with pointed blades.
The Nakiri
The nakiri is a Japanese vegetable knife with a rectangular blade profile and a flat edge that runs parallel to the cutting board. It is designed exclusively for push cutting vegetables and excels at producing uniform slices and precise cuts through plant material. It is not designed for meat or fish. The flat edge means the entire length of the blade contacts the board simultaneously, which is efficient for the specific tasks it's designed for and awkward for others.
The Slicing Knife
The slicing knife, also called a carving knife, has a long, narrow blade designed for cutting thin, even slices from large cooked proteins. The length allows you to cut across a roast or a large piece of fish in a single stroke, which produces cleaner slices than shorter blades that require multiple strokes. The narrow profile reduces the surface area in contact with the food, which reduces drag and produces cleaner cuts. Some slicing knives have a flexible blade for fish; others are rigid for beef and pork.
Steel and Its Effect on Profile Performance
The steel a blade is made from affects how well it can be ground to the geometry that makes each profile work. A profile designed for thin, precise slicing requires steel that can be hardened enough to hold a thin edge without chipping. A profile designed for heavy chopping requires steel that is tough enough to resist breaking under lateral stress. The right steel for a given profile depends on what that profile is designed to do.
